1 This is hard, there was a piece I read, that I loved. I think it was inducted into the HOF. I checked, and it wasn't there. I think someones name that starts with a "n", originally I thought it was namix, but his HOF piece isnt the one I was looking for. Only person else I can think of is Nigma but I read some of his pieces and it's not the style in which the one I like, was written in. So I'm in a bit of a qualm here. Very simple recipe with amazing results. The only bitch of it is rendering the stock down then rendering the sauce down for thickness. If you know your way around a kitchen it shouldn't be too big a problem other than the waiting game. If you are new to reductions, this may be a dangerous one to start with as it contains sugar and can end poorly.

Otherwise - liquid. crack. I used a Petit Syrah for the wine and some Oregon-imported jam.

I scaled mine up for a 3lb backstrap and it made a little too much sauce. Flavor wouldn't be pronounced enough if it was dolloped on like in the photo - but a good dunk in a bowl of it and my, my.. heaven.

Venison gets cooked to rare and finishes medium rare tented or (preferrably) covered in a corningware dish of some type - as long as it's non-reactive (e.g. NO PLASTIC)

not at all. you know I like you. Most overrated doesn't mean you aren't exemplary. LeBron is a great ball player. But overrated, a tad. He's great. Adrien Broner is a GREAT boxer, very talented young fella. was he overrated coming in? Absolutely. I actually think he couldve won but lacked in a few areas during training, wasnt completely focused. Overrated is an underrated term used to insult people, it isn't at all. Trust me. You were pushed to grandiose levels (imo) you are an excellent writer. Overrated? In my opinion, you were. You were seen to be some godly over extenuating writer who was unreachable and shouldn't even be writing on netcees-type-of-writer. Which is, uhm, dumb, cause your writing would flourish in other areas other than a hip-hop orientated site, but I think gets a lot of praise in this type of arena.
